Vegetarian and Vegetable Cooking by Christine Ingram

These recipes are vegan, vegetarian and even pescatarian. The foods are divided into sections by main dish, side dish, dessert, etc. My favorite recipes are the breads. So flaky. So delicious. They make the dinner table look classy.

But the best feature of this book is the encyclopedia of vegetables in the front. Before reading this, I did not know what a fiddlehead fern was or that eggplants originated in China & actually looked like eggs. Each profile has a picture of the vegetable (or fruit) in question, it's varieties, its name and where it originated.

I read this cookbook like a mystery novel when I first got it- it's so informative. The recipes are mostly classic comfort food dishes: Shepard's Pie, Bubble and Squeak, etc. There are also many Asian recipes. I have yet to try every recipe in the book- but I know I will.
